ON THE BACK BURNER

The sun is so welcomed that today, as I drove past a bike shop, the staff had put blankets outside and were just lounging in the sun. That is how dispirit we are for sunshine. And the forecast is looking good for more of it. I have started watering my plants every day and now I have been advised to water my veggies every day, too. The snow peas are prolific. I am going to start freezing them. I did make lettuce soup and with a shot of pesto, it was pretty good. The recipe called for one potato to use as a thickening agent , but I didn't have a potato, so I used cannellini beans. After pureeing, it worked the same. My grandson is going to give me more strawberries to keep my one plant happy. It's too late for berries this year, because it just isn't getting hot enough, so I can look forward to a crop next year. I hope. So far, I am having a bumper crop of parsley, lettuce and snow peas. You can't be too thin, too rich or have too much parsley.

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
