ON THE BACK BURNER

When you shop at Costco, you expect to buy big or go home. The brisket that I bought is the largest single piece of meat that I have ever bought. There was a definite problem getting it into my trailer fridge. I managed , but I may have broken the closer hatch on the door. I had to slam it shut and now, there  seems to be a bit of a problem about latching the door. I cut the brisket in half , wrapped the piece that I am not cooking ,as if it is a mummy. First plastic wrap, then foil. I ran out of foil, so I think that I will add more foil after my  next shopping trip. The piece of brisket that is left is still a little large for my crock pot, but I persevered and shoved it into the pot, did my traditional seasonings and slammed the cover on the crock pot before the meat outgrew the pot. By this time, the crock pot was too heavy for me to move, so I had to call my son to come and carry the whole thing into his workshop so I can cook it there on low, over night. I didn't want it cooking in the trailer, because I knew that the smell of the cooking meat would drive me and maybe Dixie , crazy. This is day one of the brisket. In  the morning, I will do day 2. That  is removing the meat from the pot and cooling it for refrigeration. Then on day 3, I slice it ,skim the fat for  gravy and put the meat back into the gravy. By that time ,it is the first night of Passover and all the work is done. Easy peasy.

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
