ON THE BACK BURNER

I'm afraid to look in the fridge. I am letting my Challah rise in the fridge over night. My Grandson is going away for the week end and he is taking his challah with him. Only problem is that I don't usually start the challah until I get back from my exercise class. That won't work for his plan to get an early start. I have never done a slow over night rise for a bread dough. I'm afraid to have one of three things happen with my dough. One, it will go according to plan. Two , the dough will grow and grow and take over the fridge and then I will have to clean it all up. Or, three,nothing will happen and I will have a big lump of flour, eggs and the rest of the ingredients , just sitting , cold and flat in the fridge. I am hoping for response number one. My plan is that when I get up , which is pretty early, to take the dough out of the fridge, let it come to room temperature while I have my quiet time with my coffee and thoughts. Then take Dixie for her morning walk, after which time the dough should be ready to bake. I hope that a beautiful Shabbat challah comes out of the oven,ready to travel. And I go to my exercise class, feeling pretty good .Fingers crossed.

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
