I haven't been happy with my bread making since I came to PT. I know how to make bread. For a grandson's Bar Mitzvah I baked challah's for each table. I should know what a good dough looks like and how a perfect loaf of bread
bakes and tastes. None of that was happening here in PT. I had an epiphany moment the other day. I have been buying store brand , generic flour. $1.99 for unbleached white flour, 5 lb. bags. It has to be the flour. So I upped
the anti. Bought King Arthur brand unbleached, white flour. 5 lb bag for $6.99 . Made my usual 3 Challahs for the kids for their Shabbat and then I made 16 sandwich rolls for my son and
grandson's lunches for the week. It was the flour! All of the loaves came out like they were supposed too and I feel vindicated . Now I can stop complaining about my bread and just get on with baking . What a relief.
