I never should have had that first bite of an authentic sufganyot. i just happened to have been in Israel at Chanukah one year and every where you looked, there were sufganyot,a doughnut like creation , filled with jelly
or whatever the pastry maven puts in the center. Taste one and you are hooked for life. The closest we have here in the states are beignet’s. A jelly filled doughnut hole from Dunkin Doughnut isn’t
close. So my project today was to make some. I Googled then went to YouTube. I did everything right,yeast, sugar, rising,frying in a lot of hot oil. Nothing . Tasted like fried cake.Now I have a recipe for beignets that I will try. Too bad that I left my Commander’s
cookbook in Venice. I have a great beignet recipe from it. I don’t want to be a name dropper, but.. When I was standing in line to get seated at Commander’s in New Orleans,Ti Brennen , a family member of that restaurant came by
and I told her that I was working my way through their cookbook. I also told her that we make our reservations with them first, and then get our plane tickets. Now my BFF, she told me to call her anytime I had a problem with reservations. I won’t ,but
it’s a fun memory. I will try a few more times with these sufganyot . By the time I get them right Chanukah will be over and I will have to find another project.
