I had a friend coming over for coffee. I decided to make beignets. In spite of leaving the south at an early age, I still like to practice that good old southern hospitality. I made the yeast dough, which I kept nibbling while I waited to fry
them. I've only made beignets twice before and I was not happy , wither time, with the way they turned out. They taste so much better at Cafe duMonde in New Orleans. But I persevered and took a chance on making them again. Different recipe.They were Ok, but
something is missing. Interesting, the person that came for coffee suggested that maybe I needed to put a bit of salt in the batter and maybe vanilla. Here's what happened. I forgot to add salt. I noticed that when I reread the recipe, and, I didn't have any
vanilla, which was called for in the original recipe. How sophisticated the palate of the person who came for coffee. I'm going to have to work harder the next time I ask this person over.
