I just made the most wonderful cheesecake. I should preference this with a fact. I do not like cheesecake. I never order it . I don't understand the mystic about cheesecake. It is really not that hard to make. With my new cookbook, I had decided to
make the cheesecake. The picture looked great and I knew everyone else would like it. I have a spring form pan, so I was set with that. After a trip to the grocery store and the liquor store, the cheesecake cost me $31.00. It was worth it. The recipe called
for ripe apricots. Even in Florida, that wasn't going to happen. I couldn't find find canned apricots or frozen apricots, so my cheesecake has canned peach halves instead. No one will tell. By 5 o'clock, I was starting the cheesecake. By 6 o'clock, I
had done all of the 8 steps and the cake was in the oven. In the meantime, I walked Noodle and folded a load of laundry. By 7 o'clock the cake was ready. The instructions said to let it sit in the turned off oven with a wooden spoon holding the door
open for another hour.I did.Then it said to put in the fridge at least 3 hours or over night. I couldn't wait. We let it cool and then cut into it. It was light and fluffy, not dense and super sweet. A winner. About the liquor store.. The recipe calls for
Amoretto. That is good stuff. I have to have this more often. With cheesecake,of course.
