ON THE BACK BURNER

I am getting into it. It being Chanukah. I was concerned that I wasn't getting Chanukah vibes. But slowly, I am beginning to have visions of sofganout and potato latkes. If I control my oil consumption, I can eat a few of each without a gallbladder attack. It's worth it. Until I went to Israel on Chanukah a few years ago, I thought sofganyout were little jelly donuts from the grocery store's bakery. I was so wrong. They are masterpieces of goodness. This year, I will attempt to make my own. First, I have to buy all of the ingredients. Then I have to make sure my kitchen vent works. I don't like the smell of the lingering frying oil. We have friends in the Mid West who fry their potato lotkes out side so the house doesn't have that oil smell. That was a little tricky if it was snowing.Potato lotkes,I have down pat. My challenge is to not accidentally shred a knuckle with the potatoes. There is no short cut to authentic potato lotkes. You need a four sided shredder. A food processor is a OK second choice, but please, no zucchini, sweet potatoes or other foreign bodies.White Potatoes, onion,egg, and maybe a drop of flour or matzah meal, salt and pepper. Follow with full fat sour cream and sweet applesauce. Oy Vey. I can't wait now.

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
