ON THE BACK BURNER

What I didn't mention yesterday when I was telling about Aron moving cows for his friend is that he also moved about 45 chickens, coop and all. His pay for this favor was 10 dozen eggs. That's a lot of eggs. I reminded him that it would soon be Passover and he could use the eggs then. He thanked me for the suggestion. I was reminded about finding eggs in the cavities of chickens back when I was a kid and my Grandmother bought her chickens on Dryades Street.( That spelling isn't right, but it's close and if you are from N.O. please correct me). I am not an egg person and this might be the reason why. Who would eat an egg without a shell from inside of a chickens belly. I know many people don't think this way and remember those eggs fondly. But I am looking for a reason why I don't care that much for eggs. Hard boiled are fine. They are dead by the time they are served to me and that seems to work just fine. Mayonnaise doesn't hurt either. A cooked egg with a runny yolk looks beautiful on a plate or on a piece of toast, but I'll pass. I am the only one I know ,who orders egg Benedict , cooked hard. It's the Hollandaise sauce that I really want, just leave the egg out. Some people will eat a scrambled egg for dinner or an omelet, but I just can't do it. A cheese soufflé does work, however. I should try again. And be grown up about it.

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
